Wild ale resulting from the blend of five barrels: 1604 (6-month-old Amber), 1733 (7-month- old Amber), 1746 (7-month-old Amber), 1747 (10-month-old Amber) and 1778 (5-month-old Amber).

Apricot Canary

Block 15 - 6.5% vol.

Blend of young and old golden ales matured in neutral oak and then conditioned on ripe apricots.

De Garde Brewing - 6.8% vol.

Golden wild ale with 42% unmalted wheat and 58% pale barley malt, hopped with 4-year-old leaf hops from local farms, and a small amount of fresh pellet hops. Aged in neutral oak red wine puncheon barrels and refermented with black and red raspberries. Finally blended with a small amount of 1, 2 and 3-year-old beer, and further conditioned on spruce tips.

Love Among The Ruins

THORNBRIDGE - 7% vol.

After using a Belgian yeast strain to give a good foundation on which to build, Thornbridge aged the beer in Burgundy barrels. Adding yeast cultures at set points soured the beer gradually over many months and give layers of flavour that can only develop over time. The rich fruit aroma and flavours compliment the sharp sourness which subsides for more malt and yeast character to come through.

This version of Monolith was blended with two other mixed fermentation dark beers from our barrel vault. Further ageing on 300 grams per litre of fresh raspberries has created a beer that is full of rich berry flavours, pleasing acidity and warming alcohols

BURNING SKY - 8.5% vol.

Rustique started life as a ‘clean’ strong Belgian style pale ale. After a primary fermentation it was transferred to a Foudre, that had previously held different mixed fermentation beers. The residual wild yeasts worked their magic over 15 months to produce a unique wild pale ale.
