Gueuze is a blend of different years lambic, fermented a second time in bottles. This beer is very different from producer to producer because, being a mixture of lambic, the aroma of the finished product is highly affected by the hand of those who assemble it. Unlinke the lambic, this type of beer is also proposed by assemblers who do not directly produce lambics, but buy them and continue their refinement. Scents vary from notes of wood, hay, ripe fruit to earthy, citric, wild notes.
